Blueberry Muffins

Blueberry Muffins
Who can resist old school blueberry muffins? And these are wholesome!
Components
- 1 cup Complete-wheat flour (finely-sifted)
- 1/2 cup Oat bran
- 2 tsp Baking powder
- 1/4 cup Honey
- 1 Egg or 2 Egg whites
- 2 tbsp Olive oil
- 1/2 cup Apple juice
- 2 tsp Pure vanilla extract
- 1 tsp Lemon juice
- 1 cup Recent or frozen blueberries
Directions

Preheat oven to 375 F.

Line eight muffin cups with muffin paper.

In a bowl, combine all dry components, excluding the blueberries.

In a blender, mix all moist components.

Add to the dry components.

Fold within the blueberries.

Divide combination evenly into ready muffin cups.

Bake for 20 minutes.

Take away muffins and place on rack to chill.
Notes
Tip: Make a double batch and freeze half of them for a wet day. They gained’t lose their taste.
