Blueberry Muffins

Blueberry Muffins

Who can resist old school blueberry muffins? And these are wholesome!

Components 

  • 1 cup Complete-wheat flour (finely-sifted)
  • 1/2 cup Oat bran
  • 2 tsp Baking powder
  • 1/4 cup Honey
  • 1 Egg or 2 Egg whites
  • 2 tbsp Olive oil
  • 1/2 cup Apple juice
  • 2 tsp Pure vanilla extract
  • 1 tsp Lemon juice
  • 1 cup Recent or frozen blueberries

Directions 

  • Preheat oven to 375 F. 

  • Line eight muffin cups with muffin paper.

  • In a bowl, combine all dry components, excluding the blueberries. 

  • In a blender, mix all moist components. 

  • Add to the dry components. 

  • Fold within the blueberries. 

  • Divide combination evenly into ready muffin cups. 

  • Bake for 20 minutes. 

  • Take away muffins and place on rack to chill.

Notes

Tip: Make a double batch and freeze half of them for a wet day. They gained’t lose their taste.
